First, look around your pantry and think about what convenience foods you would like to make mixes to replace. Do you love having brownies on hand for an after-school snack? Would having pancake mix on hand make Saturday morning breakfast more relaxing? Are you looking for a use for all those bread crusts the kids never seem to want to eat--turn them into bread crumbs or stuffing mix!
Next, decide how you want to package your mixes. I use large glass jars that I keep on open bookcases in my kitchen. This works great for me because I have a long wall that not much else fits on it. Using quart and gallon size ziplock bags is great because you can stack them up, write the directions right on the package and they are pre-portioned. You can also put the bagged mixes in a plastic bin in your cupboard to keep them all together.
Now the fun part, making all the mixes! Grab your apron and maybe even a couple of friends and have some fun!
Buy your frequently used ingredients in bulk (flour, sugar, baking powder, etc.....) If you have limited storage space, gather a couple of friends for a mix day and split the ingredients. I can easily go through 25 lbs of flour on my mix days!
Using a large, shallow bowl will make mixing your ingredients much easier. It allows you to see if your ingredients are thoroughly mixed! (I used a dishpan from the dollar store for years to make my mixes in before I finally bought a GIANT stainless steel bowl). Make sure your bowl is big enough to hold all of your ingredients and give you enough room to stir (flour showers are just not pretty!).
A whisk makes quick work of dry ingredients. I keep a couple of different size whisks on hand for mixing my dry stuff together.
When cutting in shortening, especially into a large batch, I have found the best tool is--my hands. I can feel the shortening mixing in and can scoop easily to the bottom of the bowl to make sure everything is fully incorporated.
Making your own mixes allows you to control the ingredients. You can use all organic ingredients and still save over what an organic mix would cost you. Make gluten free mixes using an all purpose gluten free flour for a celiac friend (be sure all the other ingredients are gluten free also). Use a non-dairy dry milk powder for kids with dairy allergies. Leave the salt out for those with sodium or blood pressure concerns. It really opens up a lot of choices when you can control the ingredients. Sometime it takes a little experimenting, but it is worth it!
Mixes are great for sharing with other families. A can of peaches (store bought or home canned) and a bag of cobbler mix with a carton of whipping cream is a yummy gift for a new mom or as a housewarming gift. Moms of toddlers love cookie mixes that require just the addition of and egg and milk as an easy rainy day activity!
Mixes are great for camping! We fill a box with pre-measured mixes and only have to bring along a few extras (eggs, milk, water) in the cooler and we know we will be eating well. Some of our favorite camping mixes are: pancake mix (buttermilk or cinnamon oat pancakes), skillet scone mix, corn bread mix, quick cobbler mix (to use with fresh fruit from a local farmers market or picked straight from the tree), and tortilla mix, Our friends always tease us that we eat better when we are camping than they do at home.
Over the next few weeks, I will be sharing many of my favorite mix recipes and how I use them, so here is one to get you started:
Brownie Mix
8 Cups of sugar
6 Cups of unbleached flour
2 Cups of cocoa powder
1 1/2 Tbsp. baking powder
1 Tbsp. salt
Mix together and store in airtight container.
To Make:
2 1/4 C. brownie mix
2 eggs, beaten
1/3 C. canola oil (or melted butter or margarine)
2 tsp. vanilla extract
1/2 C. chopped nuts or chocolate chips (optional)
Preheat oven to 350 degrees. Grease an 8 inch square pan. Combine ingredients and mix until smooth. Bake for 30-35 minutes until center is set. Cool, cut, serve.
*try adding mint chips for choco-mint brownies.
*top warm brownies with mini-marshmallows, choco chips and some chopped graham cracker pieces for s'more topped brownies
Texas Sheet Cake
4 C. brownie mix
1/2 C. oil
1 C. water
1/2 C. sour cream
2 eggs, slightly beaten
1 tsp. vanilla extract
1 tsp. baking soda
Preheat oven to 375 degrees. Grease a 10" x 15" jelly roll or sheet cake pan. Put brownie mix in bowl. In small saucepan bring oil, water, and sour cream to a boil. Add to the brownie mix. Stir in eggs, sour cream and baking soda. Pour into pan. Bake for 20-25 minutes until toothpick inserted in center comes out clean. Prepare frosting and frost while cake is still hot.
Sheet Cake Frosting
1/2 C. evaporated milk
1/2 C. butter or margarine
1/4 C. cocoa powder
3 C. powdered sugar
2 tsp. vanilla extract

I love your brownie mix! Although I do have a standard super rich brownie recipe, it makes a half sheet's worth of brownies (which is bad with only two people in the house), it can be time consuming, plus I grew up on box brownie mixes so I love the texture (like a dense cake). And of course last but not least the cost, anyone who keeps a decent stock of baking goods would be silly not to make their own mixes, it's just smarter.

About 10 years ago I went to a friends house and made brownies from a huge bin of homemade mix and I thought it was strange, why not just use a box mix. Do you use a cricut and vinyl for your labels?
How long does the mix last for? I'm TERRIBLE at letting things go bad, but trying to cook more than previous years with hopes of getting out of this awful habit.
This mix will last quite a while (at least 6 months) because it is all dry ingredients. If you are really concerned, you can freeze the mix indefinitely.
I used a silhouette machine which is very similar to the cricut. You could also buy the chalkboard stickers and use those--especially if you have a limited amount of jars and want to change mixes.
I have searched your site for other mixes. I did not find as many as you have on your shelves. How would I find them all?
Some of the jars contain things like pasta, cereal, etc... I have posted some of the mixes and will be posting more in the future.

The canisters are from walmart I have them as well and love them because you can leave them out and they still look cute :)

I have several different size containers. The bigger ones are one gallon jars so they hold about 16 cups. Glad that you are inspired to make your own mixes, I will be posting some more recipes soon!
They are made with a Silhouette machine (kind of like a cricut). They are just cut out of black vinyl.
If I have a favorite recipe that I want to make a mix with to keep on hand - how do I calculate how much I should use each time I want to make the mix? For example- pancakes. If I make the mix up (say 10 times the normal dry ingredients called for) how do I figure out how much to use each time I want to make pancakes? Is there some formular for that

It's just my opinion, but NEVER canola oil. So many other better options. Try raw, organic coconut oil and it will be the best brownies you've ever tasted!

As a teacher, I've been on Spring Break this week and made up several of your mixes. I've tried baking the brownies twice with disappointing results. I've only ever made brownies from a store mix. I'm hoping you can tell me what I've done wrong. After baking for the length of time on the recipe, the top is hard so I pull them out. Only to discover that under the "crust" it is almost completly raw dough. So, I put them back into the oven until its a rock. ;-)

I wanted something a little more fool proof for my teenage girls. I added 2 1/4 Cups of Brownie Mix to ZipLock Sandwich bags. Then I printed the balance of the ingredients on clear lables that I had left over from invitation envelopes. I placed the labels to the outside of the ziplock bags. Perfect for the girls. Just like having a recipe on "the box"

Brownies are in the oven right now! I just want to make this it's not just me (doing something wrong)... My brownie batter turned out very thick, like, not "pourable"...did I do something wrong or is it suppose to be like that? I've never made them from scratch before.
Beyond the convenience and money saving aspects of making your own mix, these brownies are delicious! Rich and chewy. I started with a half batch (as I didn't have any really big bowls handy) and it made enough mix (which I portioned out into individual portions) for about 3 1/2 8X8 pans of brownies. Just be aware that palm oil or any sort of palm derived fat reatults in loss of rain forest that is home to orangutans. Instead of worrying about the fat, just eat less and keep more orangs

I love this. Pre-made mixes are something I have been thinking about forever, but I am wondering how you know how much of the dry ingredients you need to scoop out... I have a pancake recipe that I would love to pre-mix the dry ingredients, I just don't know how I would know how much of the dry to add to the wet?

I haven't read the comments the only thing I would do differently is put the recipes on the back of the jar for an easy go to without having to find the recipes. How did you get the labels on with a printer and sticker paper? or did you buy the letters already printed. There is an online store called thejarstore.com and they have a TON of different size and shapes (3 gallon glass jars!!) and they are MUCH cheaper than retail. I found them via pinterest and I can't wait to order some storage jars!

Just an FYI if you want to eliminate the vanilla ( to avoid the 35% alcohol or to give as a gift) make vanilla sugar. Split open a vanilla bean and bury it in a glass jar of sugar for at least 2-3 weeks . Use sugar in the mix. No extract needed
Two more ways you can improve on this list, first use Thrive eggs, butter and milk that are freeze dried so no need to take along fresh items that could spoil or spill. You could package these up and dehydrate them or use the food storage systems to take out the air. No more jars. Thank you for putting these recipes out. We love anything that saves people money.
It won't keep long stored at room temperature, with the fat mixed in. (But the recipe doesn't call for you to mix the fat in, since you do that at preparation time.) You'd want to store your mix in the freezer if you're mixing the fat in ahead of time.
Great recipe! We made them tonight and they turned out wonderfully. Moist and chewy--definitely not a cake-like brownie, and that's fine with me! Mine baked in a glass pan for 27 minutes. It's a keeper!

Hi, I made the brownies over the weekend and as a few others said, the batter was really quite thick. I sorta freaked and added about 3 tablespoons of water. They turned out just fine (others who commented before didn't add anything and theirs were fine too it seems). Thanks for the recipes, they are great for cutting down the grocery bill! My son thought it was cool that we "made" the mix, then we "made" the brownies too!

Just my opinion... I prefer coconut oil also, but I think canola would be fine as long as it's organic/non-GMO.

Made the brownie mix, but I used dark coco powder ( I am a HUGE dark chocolate fan) and of course made a batch right away, added mini choco chips and they are fantastic!! I now have a gallon tub full of mix, and can't wait to make them again :-)
I have a quick question. I made the brownie mix (1/2 recipe because my bucket is too small for a full) and then made a 10x13 pan of brownies. I doubled the recipe and used what you listed as the wet ingredients It seemed too dry. It wasn't even coming together. (I did measure out nine 1/2 C scoops of brownie mix. My 1C measure was dirty) Is there supposed to be water mixed in with the oil and eggs? I wound up adding about 1C of water just to get it to mix together. Please help.
