"Therefore encourage one another and build each other up, just as in fact you are doing." 1 Thess. 5:11
This morning I received the sweetest note from someone letting me know that she has been encouraged and inspired by some of the things she has read on this blog. It came at the perfect time, as I have been wondering lately if it was really worthwhile to keep up this blog and if it was really making any difference. There are certainly fancier and better written blogs (I don't speak html) and sometimes it seems there is not much new, and yet everyone has there own voice and style that makes them unique. Just knowing that even one person has found something useful in these pages is enough to keep me writing and hoping that others are also finding something helpful.
Today, make it a point to let just one person know how much they have encouraged or inspired you. Your kind words may be just the thing they need to hear!

Now for a new mix!
Perfect Pancake Mix
6 C. Unbleached flour
2 C. Whole wheat pastry flour
2 C. Nonfat dry milk powder (or buttermilk powder)
1/2 C. sugar
3 Tbsp. baking powder
1 1/2 Tbsp. baking soda
2 tsp. salt
In a large bowl, whisk all ingredients together. Store in large airtight container.
-You can use all unbleached flour or combination of flours to get to 8 C. (I found it is best not to go over about 1/2 whole wheat flour with this recipe).
Pancakes:
2 C. perfect pancake mix
1 1/2 C. water (or to desired consistency)
1 egg
2 Tbsp. oil
In a medium bowl, combine egg, oil and water. Whisk in pancake mix. Let stand 2 minutes. Add additional water, if desired. Cook on preheated griddle or pan.
~We love pancakes for lazy weekend morning breakfasts, or busy weeknight dinners!
Easy Waffles
2 1/2 C. Perfect Pancake Mix
2 C. water
3 eggs, separated
1/4 C. veg. oil
Combine pancake mix, water, egg yolks and oil in large bowl. In a separate bowl, beat egg whites until stiff. Gently fold egg whites into batter. Bake in preheated waffle iron.
Puff Oven Pancake
4 Tbsp. butter or margarine
4 eggs
1 C. milk
1 C. Perfect Pancake Mix
Preheat oven to 450 degrees. Place 2 Tbsp. butter in each of 2-9" pie plates. Place pie plates in oven to melt butter. In a blender, combine eggs, pancake mix and milk. Pour batter into prepared pie plates.
Bake for 18 minutes until puffy and browned. DO NOT open the oven while pancakes are cooking.
Remove from oven and top with fruit or powdered sugar.
~These are an easy brunch dish for a crowd.
Topping Ideas:
~Fried apples and pecans
~Fresh peaches, blueberries or strawberries with a sprinkle of powdered sugar
~Sprinkle with powdered sugar and lemon zest and then sprinkle the juice of a lemon over it (my fav!)
~Bananas, coconut, pineapple and drizzled with chocolate sauce.
~Any fresh fruit and fresh whipped cream
Perfect Batter
1 C. Perfect Pancake Mix
1 C. milk
2 eggs
Combine eggs and milk in shallow bowl, Add pancake mix and stir till combined.
Use this batter to make Monte Cristo Sandwiches, onion rings, or even fried fish.
~For Monte Cristo Sandwiches, make sandwiches using your favorite bread, meat and cheese combo (ham and cheddar, turkey and swiss, roast beef and provolone) and topping (mayo, mustard). Dip sandwiches and cook on preheated griddle till browned on both sides and cheese starts to melt. Monte Cristos are traditionally topped with a light sprinkle of powdered sugar and a dollop of jelly.

I agree totally with Deedee.....miss you my friend. Will call soon.
Where do you get your lovely flour canisters?
They are available at either Target or Walmart. I have also seen them at one of our local hardware stores.
Your blog does inspire even if it's ONE person your still making a difference and now it's found it's way to me! I do have a question tho as I'm kinda new to being a homemade chef and not an out of a box cooker First what is whole wheat PASTRY flour is that just reg whole wheat flour? Second you can just use 8cups of unbleached flour correct?
Is there a way to make biscuits with this mix?
I would not make biscuits with this mix. I will be posting an all-pupose mix for biscuits soon!
can i use 8 cups of unbleached flour instead? or will it not taste as great??? thanks so much! i have literally written down almost every recipe on here. btw: the brownie mix is sensational!!!!!
ok never mind....as im writing down the recipe i see the little footnote you left about using all unbleached flour instead. duh! next time i will read evry word before commenting! lol but tell me this though...is it tastier with the wheat flour???
I just found your blog through Pinterest, All your mixes are so helpful, I'm looking forward to stocking my pantry with them. A question though. Can I leave out the Non-fat Dry Milk and just use fresh milk when I make the pancakes up?
I'm from a little town in Victoria, Australia and I just found your mixes on pinterest and am so inspired to make bread now. For some crazy reason there's always been two ingredients I've feared and avoided in baking - yeast and gelatin... Too bad I love bread and cheese cake! Your recipe is the first time I've ever looked at a bread recipe and thought - yep I could do that! Maybe it's the photos too as I'm a visual learner. Anyway, just thought you should know - you are definitely making a difference in people's lives. You inspired me all the way over the other side of the world. Kindest regards, ren smith :-)
just this morning I was making pancakes and told myself I need to figure out a mix. Yeah for pinterest found it today. thanks.
Is pastry flour and cake flour the same thing?
I found this on pinterest too. Thank you so much for posting these great ideas. The pancakes were delicious! I'm so glad to have a healthier, inexpensive and simple alternative to 'instant' pancakes!
I will be trying this for sure. In fact I'm going to have to try a lot of your mixes and stock the pantry. Such great money saving ideas and not to mention having something yummy on hand to make all the time.
I just found you via Pinerest and love the scripture on your site! Keep up your post & positive post! You are a blessing on the www! :)
Is there a non dairy alternative to this mix?

I would love to try this!!
I don't like store bought instant things because i just don't know what goes in there
Thanks for this recipe!!!!
Tried these today and they were so yummy!! I put sliced strawberrys and pure maple syrup on top! Amazing! Thanks for the recipe!!
You have an awesome site here! I found you through Pinterest, and just wanted to let you know that although I won't be commenting on posts, etc., I am bookmarking your blog so I can refer to it for ideas or whenever I need a recipe--what a generous resource you have provided. Thanks!
Love your site and the blessings. Thanks for sharing your gift with us
Found this site via Pinterest. Will definitely be trying several mixes. And, I am going to have to find that bread book. I've been on a healthy foods quest and find that most ready-made food is full of unwholesome stuff! Thank you for sharing! I love that Bible quote, too.
What size are the containers?
What size are the containers?
Thank you for this pancake recipe. My dad makes pancakes for my mother everyday for breakfast. They are 87 and 88 years old and my mom has dementia. I have been looking for a mix for them so they don't have to use store bought. Thank you. And thank you for your Proverbs 31 encouragement.
This makes Sunday morning breakfasts a breeze. Thank you!
Thank you! I live in Germany and am so excited to try these recipes out on my family. I want them to know my home cooking from Texas also. Which means lots of home made recipes from Granny.:) Some of them just take up to much time.
This will make it a whole lot easier/faster to please my hungry bunch. Our pancake breakfasts will happen more often with this recipe. Yippy, a time saver for mom! :)
Have you tried this without the dried milk?
Love, love, love your site!
Just found you via Pinterest, as it seems so many have! I'm very excited to put your many mixes together and stock my pantry! I hope you're still writing .... I love the scripture, too.
I am going to put together your perfect pancake mix for me.....my husband loves buckwheat pancakes do you have any suggestions how to incorporate this into your mixture?
I'm not sure where you are getting your info, however great topic. I needs to spend some time learning much more or working out more. Thank you for great information I used to be looking for this information for my mission.
Here is my webpage :: enhancement pills
Love your mixes! Where did you find those lovely jars?
You're an inspiration. Pls keep writing. God bless you real good. And tell you what, i'm reading your blog all the way from Asia. Keep up the good work and thank you for the tips. You rock, Prov 31 women always rock!
I love these. Please keep posting. Make ahead mixes are my favorite!
May I offer a suggestion? "Perfect Batter" is pretty nebulous. Maybe "Perfect Fry Batter (perfect for deep or pan frying)" is a more helpful title.
Thanks so much! We were looking for a recipe to use camping that didn't require fresh milk or powdered eggs. These were fluffy and delicious and we liked that they had some whole wheat flour. Saving this one for sure,
i used 8 cups instead of all purpose flour, the waffles turned out super soft and also i added cinnamon , since we add nutela on it instead of syrup... love it... and i have the mix in my pantry instead of boxed one,,,, thank you thank you :-)
