Homemade Marshmallows

One taste and you will never eat store bought marshmallows again!
Homemade Vanilla Marshmallows

You need:
3 pkgs. unflavored gelatin
1 C. ice water
1 1/2 C. sugar
1 C. light corn syrup (*or alternative)
1/4 tsp. salt
1 tsp. vanilla extract
powdered sugar

1. Place gelatin in bowl of mixer and add 1/2 C. cold water. Do not stir. Let sit and allow to "bloom".

2. Meanwhile, in a small saucepan combine remaining 1/2 C. water, sugar, corn syrup and salt.  Stir to combine.  Place over medium heat and cook (without stirring) until mixture reaches 240 degrees (soft ball stage) on a candy thermometer. Immediately remove from heat.

3. Turn mixer on lowest speed and SLOWLY and CAREFULLY pour the sugar mixture down the side of the bowl into the gelatin mixture.

4. Once you have added all they sugar mixture, slowly increase the speed of the mixture to high.  Whip until mixture becomes thick and is lukewarm. (this takes about 12-15 minutes).   Add vanilla in the last minute or two of mixing.

5. While the mixture is whipping, prepare a 9x13 pan. Spritz lightly with cooking spray and then coat with powdered sugar.

6. When mixture is cool, use a greased spatula to transfer mixture to pan.  Smooth the top of the mixture and then coat with powdered sugar.

7. Let rest, uncovered, for at least 4 hours or overnight. Remove marshmallows from pan on lightly dusted counter or cutting board.

8.  Using a pizza cutter,cut into desired size squares and roll in powdered sugar.

~You can use any type of extract for these.  Try almond, maple or lemon!

~Add a few drops of food coloring to the mixture as it is whipping for even prettier marshmallows.

~This can be a little hard on your mixer, I actually burned the motor out of my first Kitchen Aid mixer making marshmallows.

~To eliminate the corn syrup, use the light sugar syrup recipe here.

Hi Angel!  Just a couple of questions.  1.  Will this kill my cheapo hand mixer?  and 2.  What about adding a bit of color to the marshmallows?  Have you ever tried that?  The thought of lemony yellow marshmallows just sounds awesome to me!

Well, it may kill your hand mixer, it depends on how much power and life it has in it.  I know that they can be made with a hand mixer, I have a friend who uses her to make them, but if you make too many batches, it is hard on the motor.
Just add a few drops of color when you add your vanilla (or other flavoring).  I have made pink ones for a little girl's birthday party before.
Lemony yellow marshmallows sound so cheerful.  Post a picture to the facebook page if you make them!

Hi, sorry (am british) does the C refer to an american cup?
Is it possible to do this by hand or do you really need a machine?
this is one thing I have never tried but would just love to have a go.

Yes, the C. is an american cup.  I don't think it would be possible to whip them by hand.  It takes 15-20 minutes with the mixer (going up to high speed). I have actually burnt the motors out of two mixers making marshmallows.

I have never used flavored gelatin to make my marshmallows,  It would definitely be worth a try.  I usually use the flavored extracts  or candy flavorings to make different flavors.  If you try it, please let me know and if I get a chance to try it out, I will post the results.

Fortunately --the I usually buy used mixers at garage sales--just for this purpose.  I now have a Bosch mixer and I am pretty sure that you couldn't burn the motor up in it if you tried.  It kneads 6 loaves of whole wheat dough with no effort!

Approximately how long does it take for them to "bloom"? I teach a cooking class in high school, and would love to have my students make these. But I need to know a time for the lesson plan. Thanks so much. Wonderful blog!
